
This is our favorite way to eat beets! The tang of the balsamic vinegar and the sweetness of honey perfectly complement the earthiness of the beets. Serve these warm as a side dish or store and refrigerate for later as a salad topper!
Balsamic Roasted Beets (6 servings)
Ingredients
3 large beets, peeled and diced
1 Tablespoon olive oil
1/2 tsp salt
1 Tablespoon balsamic vinegar
1 Tablespoon honey
Directions
Preheat oven to 425 degrees F. Line and lightly grease a baking sheet.
Peel and cut beets into 1 inch cubes and place in a medium bowl. Add olive oil and salt and toss until beets are coated.
Spread beets on baking sheet, then bake for 15-20 minutes. Stir beets and bake an additional ten minutes or until beets are fork tender.
While beets are baking, mix balsamic vinegar and honey in a small bowl. When beets are fork tender, top with the balsamic honey mixture and stir until beets are evenly coated. Bake for an additional 10 minutes, stirring once halfway through.
Remove beets from oven and serve warm as a side dish, or store and refrigerate for later as a salad topper. Enjoy!
