
When everyone in your household, even your little, sometimes-picky eaters, loves a recipe, you know it's a keeper. Here is our favorite recipe for cucumber salad!
Ingredients:
2 cucumbers, sliced very thinly
2 Tablespoons rice vinegar
1 Tablespoon sesame oil
1 Tablespoon sugar
2 teaspoons soy sauce
1/2 teaspoon salt
2 teaspoons toasted sesame seeds
Crushed red pepper, to taste or optional (We skip for the kids and add to our own plates if desired)
Directions:
Slice cucumbers and set aside.
In a medium bowl combine remaining ingredients and mix well until sugar and salt are mostly dissolved.
Add cucumbers and stir to coat.
Salad can be made a up to a few hours ahead of serving, but it tastes amazing even when served immediately. These will get very soggy if kept for the next day, but we always devour the entire thing at mealtime!
