A little cool, a little peppery, this is a perfect summer salad on a hot day. Enjoy as a side, snack, or light meal!
Cantaloupe + Cucumber Salad (4-6 Servings)
Ingredients
1 cantaloupe, cubed
1 cucumber, thinly sliced
1 red bell pepper, thinly sliced
1/2 large red onion, thinly sliced
3-4 T apple cider vinegar
1 T olive oil
1/2 tsp black pepper
salt, to taste
fresh basil or mint (optional)
Directions
Combine all fruit and vegetables in a large bowl.
Add apple cider vinegar, salt and pepper. Mix well to coat.
Cover and refrigerate for at least one hour to chill and marinate. Mix again before serving. Enjoy!
