Cantaloupe + Cucumber Salad


A little cool, a little peppery, this is a perfect summer salad on a hot day. Enjoy as a side, snack, or light meal!


Cantaloupe + Cucumber Salad (4-6 Servings)


Ingredients

  • 1 cantaloupe, cubed

  • 1 cucumber, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 1/2 large red onion, thinly sliced

  • 3-4 T apple cider vinegar

  • 1 T olive oil

  • 1/2 tsp black pepper

  • salt, to taste

  • fresh basil or mint (optional)

Directions

  1. Combine all fruit and vegetables in a large bowl.

  2. Add apple cider vinegar, salt and pepper. Mix well to coat.

  3. Cover and refrigerate for at least one hour to chill and marinate. Mix again before serving. Enjoy!
