Korean Carrot Salad

We cook with a lot of Asian flavors in our household, so we love finding new recipes where we can use our staple ingredients. This carrot salad is so refreshing and addicting, and a perfect healthy side for summer!


Korean Carrot Salad (4 Servings)


Ingredients

  • 4 large carrots, peeled and julienned

  • 2 cloves garlic, minced

  • 1 T fresh ginger, grated

  • 2 T soy sauce

  • 2 T sesame oil

  • 1 T rice vinegar

  • 1 T sugar

  • 1 tsp red pepper flakes (optional)

  • 1 T sesasme seeds

  • 2 green onions, thinly sliced


Directions

  1. In a large bowl, combine the carrots, garlic, and ginger. Set aside.

  2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, sugar, and red pepper flakes until the sugar is dissolved.

  3. Pour the dressing over the carrot mixture and toss well to coat. Refrigerate for at least 30 minutes before serving. Before serving, sprinkle with sesame seeds and green onions. Enjoy!
