Sweet Potato Pie


Full disclosure: we are not a sweet potato family my any means, but we will make an exception for this! It's a great addition to any holiday dessert table and is sure to be a hit.


Sweet Potato Pie (8 Servings)


Ingredients

  • 1 lb sweet potatoes

  • 1/2 cup butter, softened

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1/2 cup whole milk

  • 2 large eggs

  • 2 tsp vanilla extract

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp salt

  • 1 pinch ground cloves

  • 1 9" unbaked pie shell (homemade or store bought)


Directions

  1. Preheat oven to 400 degrees F. Wash and dry sweet potatoes, then wrap with foil and place on a baking sheet. Bake until soft, about 45 minutes (longer if your sweet potatoes are extra large). Remove from oven and allow to cool completely.

  2. Once potatoes are cooled, preheat oven to 350 degrees F. Remove skin from sweet potatoes and place in a large bowl. Mash potatoes with butter until completely smooth (can use a stand mixer or hand mixer). Whisk in sugar, brown sugar, whole milk, eggs, vanilla extract, cinnamon, nutmeg, salt and cloves until well combined.

  3. Pour filling into pie shell, smoothing with a spatula to even out. Bake pie for 50-60 minutes, or until toothpick inserted in the center comes out clean. The pie will rise while baking, then deflate as it cools.

  4. Serve warm or chilled, with a dollop of whipped cream or marshmallow fluff. Enjoy!
