Apple Cider Vinaigrette


We suggested fall salads in our newsletter this week, so how about a salad dressing recipe to go with all your impending, amazing seasonal salads?! Tangy and sweet, and best of all, quick and easy!


Apple Cider Vinaigrette (4-6 Servings)


Ingredients

  • 1/4 cup apple cider vinegar

  • 1/3 cup olive oil

  • 1 Tablespoon dijon mustard

  • 1 Tablespoon honey or maple syrup

  • 1 Tablespoon lemon juice

  • salt and pepper, to taste


Directions

  1. Add all ingredients to a jar or bowl, then shake or whisk together. Serve on your favorite autumnal salad.

  2. Some great ingredients to try on your salad: roasted squash, roasted beets, apples, pecan halves, dried cranberries, goat cheese or feta cheese crumbles, or whatever strikes your fall fancy. Possibilities are endless!
