Delicata Squash Rings with Cinnamon Apples


Last week we gave you a savory Fall side dish...this week we wanted to give you a different, sweeter take on Delicata squash. Add some apples and a dash of maple syrup, and you've got a delightfully warm, sweet treat that has "Fall" written all over it!


Delicata Squash Rings with Cinnamon Apples (2-3 Servings)


Ingredients

  • 1 delicata squash, washed and dried

  • 2 medium apples, washed and dried

  • cinnamon

  • 2 Tablespoons dried cranberries

  • 1 Tablespoon maple syrup, or more to taste


Directions

  1. Preheat oven to 350 degrees F. Place two oven racks as close as possible to the center of the oven.

  2. Line two baking sheets with parchment paper (if using foil, spray with cooking spray after lining baking sheets).

  3. Cut top and tail off delicata squash. Cut squash in half to create two shorter cylinders, then scoop out the seeds. Slice cylinders into rings 1/4 thick.

  4. Arrange squash rings in a single layer on one of the baking sheets. Spray rings lightly with cooking spray, then sprinkle with a little cinnamon. Flip rings over and repeat.

  5. Cover squash with foil and bake 25-30 minutes, flipping rings halfway through.

  6. While squash is baking, core the apples and slice into rings 1/4 thick. As with the squash, arrange apple rings on the second baking sheet, spray with cooking spray, sprinkle with cinnamon, flip over and repeat.

  7. Bake apples uncovered for 20-25 minutes or until tender, flipping rings halfway through.

  8. To serve, stack alternating rings of squash and apples (5 to 7 high stacks depending on how many servings you want). Sprinkle with a little more cinnamon, top with cranberries, and drizzle maple syrup over stacks. Serve and enjoy!
