Marinated Tomatoes with Mozzarella

These marinated tomatoes are a step up from Caprese Salad and are full of fresh, Summer flavors!



2-3 tomatoes, sliced 1/2 inch thick

1/3 cup extra virgin olive oil

2 Tablespoons balsamic vinegar

1 Tablespoon honey (optional)

2 Tablespoons finely chopped red onion

1 large clove garlic, minced

1/4 teaspoon dried parsley

1 Tablespoon fresh basil, minced, plus more for garnish

16 oz fresh mozzarella, diced

Salt and pepper to taste


Slice tomatoes and arrange them in a single layer in a large, shallow dish.

In a jar, combine olive oil, balsamic vinegar, honey, onion, garlic, parsley, basil, salt and pepper. Close the lid and shake mixture vigorously to emulsify and pour over the tomatoes in the dish.

Cover and marinate for at least one hour in the refrigerator. Let marinated tomatoes sit out at room temperature at least 30 minutes before serving. Add diced mozzarella and basil leaves for garnish. Serve and enjoy!
