Parmesan Crusted Delicata Squash


With the weather and seasons changing, comes a cornucopia of different vegetables, including winter squash! We love delicata squash for its nutty, sweet, buttery flavor. It's also easy to prepare, cooks quickly, and there's no need to peel its delicate skin (hence, "delicata"). Kick off winter squash season with this lovely side dish!


Parmesan Crusted Delicata Squash (4 servings)


Ingredients

  • 1 delicata squash, washed and dried

  • 1 Tablespoon olive oil

  • 1 clove garlic, crushed

  • 1/4 teaspoon salt

  • black pepper, to taste

  • 1/4 cup grated parmesan

  • 2 Tablespoons parsley, finely chopped

  • 1 teaspoon fresh thyme, finely chopped

  • 1/2 teaspoon lemon zest


Directions

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and lightly spray with cooking spray.

  2. Slice the squash in half lengthwise and scoop out the seeds with a spoon. Slice each half into 1/4 inch thick slices (half circles) and place them in a large bowl.

  3. In a small bowl, combine the parmesan, parsley, thyme, and lemon zest.

  4. Drizzle the olive oil garlic, salt and pepper over the squash slices and toss well to coat.

  5. Lay squash slices on the prepared baking sheet in a single layer, then top with the parmesan mixture.

  6. Bake 20-25 minutes or until squash is soft and golden brown on the edges. Serve and enjoy!
