
I don't know about you, but for me, most nights I'm so focused on our main dish that our side dish ends up being lackluster. Some nights, I want our side dish to have a little "oomph", and this broccoli dish certainly fits the bill!
Parmesan Roasted Broccoli (4 servings)
Ingredients
1 large head broccoli
2 cloves garlic, mnced
1-2 Tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon lemon juice
1/4 cup chopped pecans
1/4 cup grated parmesan cheese
Directions
Preheat oven to 425 degrees F.
Cut broccoli off main stalk and into bite-sized florets (we also include the small stalks with the florets) and place in a large bowl. Add olive oil, garlic, salt, pepper, and pecans to the bowl and toss until combined. Spread onto a baking sheet in a single layer.
Bake broccoli for 15-20 minutes, stirring once halfway through. When broccoli is tender, remove from oven and toss with lemon juice and parmesan cheese. Serve immediately and enjoy!
