Sweet Corn Salad

The kids are back in school, and for us it marks the beginning of the end of summer. Chock full of summer staple veggies and tossed with a simple, light dressing, this is a perfect summer salad to end summer with a bang!

Sweet Corn Salad (6 servings)


  • 1-2 tomatoes, diced

  • 3 ears sweet corn, cooked and cut off the cob

  • 2 avocados, diced

  • 1/2 red onion or 1 shallot, thinly sliced

  • 1/4 cup cilantro, chopped

  • 2 Tablespoons olive oil

  • 2-3 Tablespoons lime juice

  • 2 cloves garlic, minced

  • 3/4 teaspoon salt

  • 1/8 teaspoon pepper


  1. In a large bowl, combine tomatoes, corn, avocado, red onion or shallot, cilantro, and garlic. Add olive oil, lime juice, salt and pepper. Toss until just combined and evenly coated. Serve and enjoy!
